Wolff zog von seinem Geburtsort Mergners in das etwa 20 Kilometer entfernte Wannbach, heute ein Ortsteil von Pretzfeld. Dort wurde er Bäcker und war somit als erster Eckart in der Nahrungsmittelherstellung tätig. 1607 nahm Wolff Eckart einen neuen Beruf auf, obwohl er zu dieser Zeit schon 42 Jahre alt war: Er wurde Müller auf der Thosmühle, in deren Nachbarschaft er schon einige Grundstücke besaß. Die Thosmühle liegt einen Kilometer von Urspring entfernt. Es ist denkbar, dass Wolff Eckart beiden Berufen nachgegangen ist, so dass er Müller und zugleich Bäcker war. 1595 heiratete Wolff Eckart Margaretha Hoffmann (*ca. 1570 in Dietersdorf bei Schwabach; † vor 1615) und hatte mit ihr mindestens fünf Kinder. Der älteste Sohn war [[Special:MyLanguage/Conz Eckart (I)|Conz]].
